I love ramen - the problem is: since I have been to Japen I became aware of the inferiority of ramen outside Japan. So I have looking for a place in HK that serves something at least close.
I found it finally.
The place is a simple ramen bar - a few seats around the bar and a couple of small tables.
Ordering is simple: you get a small paper sheet, tick your soup (there are four to choose from), softness of noodles, extras (like the Japanese egg) and a few minutes later you have a generous portion of ramen in front if you.
I went for the miso soup with hard noodles, egg and some extra pork. The soup was great - rich and deep, the noodles hot, yellow and chewy - ramen as it should be. Pork slices a bit on the small side, but good, the egg with a perfect runny yolk.

I love this restaurant, it just opened recently I have been there at least 10 times over the past couple of weeks. They serve relatively authentic Hunan food, which is not easy to find in HK - yes that means it's quite spicy. 
One of the dishes to judge the quality of a Hunan restaurant is the fish head and theirs is spot on - I usually go for the half green/half red variety, which is juicy, flavorful and spicy. Don't forget to order some noodles to soak up the soup. Lamp cutlets with cumin are also highly recommended: good meat with a strong cumin rub, nicely grilled. From the veggies I would recommend the fried cabbage, great texture and lots of chilly (a but oily). They also serve the typical Hunan rice in small clay pots. 
However two negative points: their Hong shao rou (红烧肉) is quite weak - flavor is to mild and texture is also not right. Secondly the service is a bit patchy: they sometimes forget dishes, it can take ages to get rice etc.
The place is not easy to find: it's a narrow staircase up from the street. Interior is quite basic and they only have around 10 tables, which fill up very quickly, so be early or book in advance.

Nice casual, but comfortable Japanese eatery, the decoration makes it look a bit like a hiking hut. Restaurant offers a large selection of Japanese comfort food. The vegetable curry with shrimps has a big variety of vegetables with good texture and a healthy serving of shrimps. Curry was a but on the sweet side (I like it spicier), but with good taste. Udon soup with slowly roasted pork came as a huge bowl, soup was good (a but salty), noodles a bit thinner than most udon, bit good, the pork was very tender and tasty. Friendly and fast service, good value for money. Wouldn't travel to quarry bay to eat there, but definitely a good option, when in the area.

Went for Sunday lunch. Atmosphere is nice and casual, there are also a few tables outside. I had the shrimp ceviche as starter: decent portion with a lot of shrimp and a nice sour dressing that could have been a bit spicier. Seemed to me that the shrimps where cooked while I expected them to be cured by the citrus juice. My main was the salmon, which took quite a while to prepare. Nice big piece of good quality salmon, grilled on the outside and almost raw inside – not sure if this was on purpose or not, but fine for me. The salmon came with tasty mushrooms, strange tasting pieces of pork belly and was topped (on the table) with some soup-like tomato sauce, which was completely unnecessary for me (I think to dish would be better without). Just drank water (which is free), but the wine happy hour (was too early for that) seems to be a good deal. This is Elements Rooftop Garden so expect prices to be high. Overall an ok experience and one of the better options in the area.

Simple restaurant with very good and very spicy Thai food. We had papaya salad: nice and fresh, very spicy good degree of sourness - definitely one of the better ones I had, minced pork salad, which was very tender again with a nice balance of spice and lime flavor. Finally  Tom Yung Kong which was a bit too creamy but with good taste and some nice big shrimps. Overall very authentic and complex flavors. As desert we got mango with sticky rice: very good mango, rice in two colors (white and black) which was a bit bland and lots of very thick coconut sauce, not a top version of this dish, but still tasty.
Fast and friendly service. Seem a but pricy given the simple style of the restaurant (mains around 70 HKD), but worth it for the quality.

Ok: I love spicy food so this is an easy sell for me. But this place has really great spicy noodles. My favorites are the chilled noodle with chilli and chilled noodle with minced pork (both 34 HKD), both cold noodles with lots of chilly, but also lots of aroma beyond the pure spiciness. Their signature sour and spicy noodles are also very good (and a steal at 27 HKD), soft noodles in a sour and spicy soup with some pickled vegetables. Spicy chicken (choice of cooked leg or breast in hot chilly oil) is also highly recommended as are the veggies. They offer five levels of spicyness - level 1 is very mild, level 5 is to spicy for some people from Sichuan.
Service is fast and friendly, setting very basic, but clean.
There is usually no waiting time

The name of the restaurant is a bit misleading, because this is not Chongqing style food, however it is quite good. The restaurant serves a variety of items (veggy, meat, seafood) that are all prepared in the same way: BBQed and then covered with a spicy powder, you will be asked which spice lever you want - be aware that very spivey IS very spicy. Sounds a bit boring? I tastes surprisingly good and there is a lot of variety to choose from. My personal favorites are the mushrooms, eggplant, beef rib and the whole pomfret. Dishes arrive fast (expert for the fish, which takes a bit longer), so you can start small and order additional dishes (portions are quite small). Prices are very reasonable and service is very efficient.

This place mainly serves ramen, the taste is ok - a quick fix when you get hungry in elements, but nothing worth a detour. Noodles are good (in particular the udon), soup base is ok, but could have more flavor. Generally the food is a bit more oily than most other Japanese fast foods, especially the fried beef. Quite expensive for the quality, but that's normal in Element. Waiting times can be quite long.

I am not a big fan on congee, but I nevertheless like this restaurant as some of there noodle dishes a very good. I in particakur like the fried noodles with beef - one of the best version of this HK favorite. Also good: fried egg with shrimp (perfect texture if the egg) and the beef brisket. The decor is a bit too purple for my taste, service is ok. Prices are a bit high for the quality, but low for the location - so overall ok.

This restaurant tries to recreate the experience of a Taiwanese night market. I really like Taiwanese night markets so I like the idea. The firtst impression is good - stylish, but not over the top. Prices are off course way higher than on a real night market, which is natural given the location and setting. Unfortunately the restaurant fails to deliver on food quality - the have dished you would expect, but the taste isn't even close to the Taiwanese original, e.g. the Braised pork rice is surprisingly bland. On top the service is unattentive and doesn't seem very motivated.
